Best Ever Brownie

We've recently reworked our brownie recipe to bring you an easy, high fibre and refined sugar free treat!

I hate when recipe websites give you their whole life story at the top so I'll get straight into it...



Ingredients:

  • 2 x medium sweet potatoes (cooked you want about 1.5 cups)

  • 2 x eggs

  • 1 tbs vanilla extract

  • generous pinch of salt

  • 1/2 cup maple syrup (can sub 1/4 cup sugar, or 1/2 cup alternative sugar if you don't have maple)

  • 2 Tbs Coconut oil or butter

  • 1/3 cup cacao or unsweetened cocoa powder

  • 1 cup SR flour of your choice (or plain with 1tsp baking powder)

  • 1 tsp baking powder

  • 1/2 cup dark choc chips


Method:

  1. In a glass covered bowl or dish, add sweet potatoes (whole, unpeeled and punctured with a fork) to a splash of water at the bottom of the dish and microwave for 7-10 minutes. Once soft when poked, allow to cool slightly and scrape off the skin and add soft sweet potato to a cup (add your coconut or butter now if it's hard).

  2. While sweet potoato is cooking line a medium baking dish with baking paper and preheat oven to 180 degrees.

  3. Mix all wet ingredients and then add the dry ingredients to the wet mixture, adding the choc chips last. It will need a lot of stirring to fully combine.

  4. Transfer to baking dish and cook for 25 minutes.

  5. Once cooled chop into 12 small squares and you've got yourself a delicious high fibre, roughly 170 calorie, decadent (and dare I say moist) treat!
